Chicken A La King (ON PLAN) Ingredients •2 cups cooked chicken breast •1/4 onion diced •1 small green pepper diced •1 small can of mushrooms drained •2 tablespoons canola oil •1/4 teaspoon black pepper •2 tablespoons corn startch •1 cup skim milk •6 slices of Kraft Fat Free Swiss Cheese •1 1/4 cups chicken stock •4 oz jar chopped pimentos drained •salt •pepper Directions Cook the Vegetables In a frying pan, heat the oil and sauté the onion for 2-3 minutes. Next, add the green pepper and mushrooms. Sauté all of the vegetables for another 3-4 minutes until the peppers are soft. Add black pepper to season the vegetables. Add the corn startch to thicken the mixture, Mix for another 1 minute. Add the milk, chicken stock and some of the salt. Bring the mixture to a simmer and cook for 3-4 minutes, add the cheese slices remove from heat and stir in until the cheese is melted and blended. Finally, add the cooked chicken and the pimento. Mix it all together and heat it through. Serve Chicken A La King (ON PLAN) over Riced Cauliflower Riced Cauliflower Remove the leaves from Cauliflower and Cut the Cauliflower into large chunks that will fit in the mouth of your food processor. Use a grate blade to process the whole Cauliflower Process fresh cauliflower until it is the size of rice, either using the plain steel blade or the shredder blade. If you don t have a food processor you could also use a hand-held grater or cut it very finely by hand. Place the riced cauliflower into a microwave safe covered dish. Cook in the microwave for 2 minutes stir and cook for another 3 minutes. You don t need to add any water, just cook it as is. When it's done, you ll have a slightly firm, but tender rice alternative. Add some I can't Believe It's Not Butter, salt and pepper and it's ready to serve. Innocent Cheese Cake preheat oven 350 Ingredients 18 Graham Crackers (healthiest ones you can find- Look for words like: low fat, low sugar, low sodium) 3 tablespoons canola oil ---- 1/4 cup whole grain flour 1 cup fat free sour cream 1 tablespoon vanilla extract 4 (8 ounce box/packages) fat free cream cheese 1 & 1/2 cups SPLENDA 2/3 cup skim milk 4 eggs 2 teaspoons lemon zest 1 teaspoon orange zest --------------------- DIRECTIONS Do not BEAT any of this cake at any time during the recipe ONLY mix stirring by folding Baking PAM coated 9 inch spring form pan mix crushed crackers and 3 tablespoons canola to form crust press into sprayed pan pan 1/4 cup flour 1 cup sour cream 1 tablespoon vanilla mix by folding with spatula set aside in another bowl 4 pk fat free cream cheese soften with spatula add 1 & 1/2 cup splenda use spatula to mash these together add 2/3 cup skim milk mix in add egg 1 mix add egg 2 mix add egg 3 mix add egg 4 mix add 2 teaspoons lemon zest add 1 teaspoon orange zest mix add first bowl to second bowl stir just until mixed Do not BEAT any of this cake at any time during the recipe ONLY mix stirring by folding pour slowly into spring form pan take care to not disturb cracker crust tap pan causing any air bubbles to surface bake 350 degrees for one hour do not open oven at the end of one hour, turn off oven let cake rest in oven for 1 hr put in refrigerator to chill befpre serving 8 large servings |
